Glorious Morning Muffin Recipe

IMG_0126Baking is not usually one of my stronger qualities… but I have to admit, these little sweet cakes are good! I have taken the iconic Morning Glory Muffin and transformed it into a gluten-free, dairy-free, no refined sugar added, delicious masterpiece that is now appropriately named the Glorious Morning Muffin. (Can you hear the angels singing??)


  • 1/2 cup nuts (pecan halves, walnuts, almonds)
  • 3/4 cup oat flour
  • 1 1/4 cup brown rice flour
  • 1/4 cup hemp hearts
  • 1 1/4 tsp baking soad
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp sea salt
  • 1 1/2 cups organic baby carrots
  • 1 cup fresh pineapple chunks (or organic crushed and canned with juice)
  • 1/2 cup honey (local if you can)
  • 1/4 cup oil (coconut, sunflower, grape seed or avocado)
  • 1/4 cup vanilla almond milk
  • 2 large eggs (free range, organic or pastured is best)
  • 1/2 cup chopped, unsulphured dried apricots or coconut shreds (optional)


  1. Preheat oven to 350 degrees. Line 15 medium-sized muffin cups with paper liners.
  2. Place nuts into food processor or Vitamix blender and pulse until finely chopped.
  3. Pour nuts into large mixing bowl.
  4. Add flour, hemp hearts, baking soda, baking powder, cinnamon, nutmeg and sea salt to the nuts and mix until completely incorporated.
  5. Place baby carrots into food processor or Vitamix and pulse until finely chopped.
  6. Add pineapple, honey, almond milk, oil and eggs and pulse 3 times until blended.
  7. Pour liquid mixture over dry ingredients. Stir by hand until moistened.
  8. Optional to fold in apricot and/or coconut flakes
  9. Scoop mixture evenly into muffin cups until almost full
  10. Bake 15-20 minutes & let cool for 10 minutes.
  11. enJOY!!
  12. To store, let cool completely and place in a covered container at room temp.

This would be great with a little green protein smoothie in the morning or enjoyed as a mid-morning snack at woIMG_0114rk… and it’s perfect for my vegetarian, gluten-free or food-allergy prone gals.
