Healthy Winter Comfort Food Recipe

When the weather is cold and stress levels high during this time of year, we tend to crave something warm and comforting… which can lead to apple pie, hot cocoa, heavy pasta dishes or other hot & (carb) heavy foods.    So I was craving this warm, filling comfort type food today and I decided to give in to it! I gave in by getting creative and creating a meal that satisfied what I was wanting without compromising my healthy eating. You don’t just have to have one or the other!    I like my meals to be quick, easy, full of nutrition and delicious without all the calories.  I love using healthy substitutes to make my favorite dishes.   Get creative in the kitchen and you’ll see you don’t have to give up your “cravings” this winter, just modify them a bit… you may even find you like the healthier versions better because of how great you feel afterwards!   


  Coconut Curry No-Oodles 

  • 1 package of No-Oodles (or other brand of calorie free noodles) 
  • 1 small zucchini, grated 
  • 1/3 cup light organic coconut milk (the culinary version) 
  • 2 tsp curry powder 
  • 2 tsp coconut aminos (a sprinkle of sea salt will work too) 
  • 3 drops liquid stevia 

Combine all ingredients over medium-high heat and stir until hot. Pour into a bowl & bon appetite!    Because this meal is so low in calories, it should be used as a small meal in breakfast & lunch or lunch & dinner. To make it a little more substantial, add grilled chicken or other lean protein source.    In this recipe you see I use No-Oodles which are a calorie free noodle-like food that is made from yam flour. This fills you up like traditional pasta and gives you the sensory fulfillment of eating pasta without ANY of the calories. I also like to use coconut aminos in place of soy sauce to avoid consuming soy, plus the sodium content is much lower.
